Having grown up in the era of “finish your plate because there are children that don’t have enough to eat”, I absolutely hate to throw food away. I am forever bringing home leftovers, freezing fruit, and finding purpose for fresh veggies before they pass their life expectancy. It never seems to matter how many bananas we buy, inevitably, there are always one or two left to rot on the countertop. It makes me, well, go bananas! So, what do I do with these aging fellows? Make banana bread, of course! Sometimes, I will make muffins instead. It just depends on how many bananas need repurposing. Generally, you can make a banana bread with 1 to 2 bananas, while most muffin recipies require 3 to complete the recipe. Today, I chose a 2 banana recipe for banana bread from Simply recipies. The prep time is only 10 minutes . I like this recipe because everything gets mixed in one bowl so there’s less mess to clean up. Cook time says 60 mins, but I like to shorten the time a bit as I think it makes the bread a bit more moist.
First, I preheated the oven, greased the pan, and melted the butter.

Second, I mashed the bananas with a fork. Then, I mixed in all of the other ingredients. I always like to add a bit more vanilla when I bake. It accentuates the vanilla flavor, which is my fave! This time, I added chocolate chips to the recipe which is always a crowd fave with my little.

For the third and last step, just dump and bake!

With such a short prep time, banana bread is a quick and easy way to turn a couple of aging bananas into a delicious treat. All yum and zero waste!
